|Margarine||1⁄4 Cup (4 tbs)|

|Sugar||3⁄4 Cup (12 tbs)|
|Shredded lemon peel||1⁄4 Teaspoon|
|Lemon juice||3 Tablespoon|
|All purpose flour||2 Tablespoon|
|Baking powder||1⁄4 Teaspoon|
Spray an 8 x 8 x 2-inch baking pan with nonstick coating.
In a small mixer bowl beat margarine on medium speed of an electric mixer about 30 seconds.
Add 3 tablespoons sugar, then beat till fluffy.
Stir in 3/4 cup flour.
Pat onto the bottom of the pan.
Bake in a 350° oven for 15 minutes.
Meanwhile, in the bowl combine egg whites and egg.
Add 3/4 cup sugar, lemon peel, lemon juice, 2 tablespoons flour, and baking powder.
Beat on medium speed about 3 minutes or till slightly thickened, then pour over baked layer in pan.
Continue baking for 25 to 30 minutes or till edges are light brown and center is set.
Sift lightly with powdered sugar, if desired.
Cut into bars.
