Chewy Oatmeal Raisin Bars

Ingredients
  Butter 1⁄2 Cup (8 tbs)
  Firmly packed light brown sugar 1 Cup (16 tbs)
  Egg 1
  Vanilla extract 1 Teaspoon
  All purpose flour 1 Cup (16 tbs)
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Quick-cooking rolled oats 1 Cup (16 tbs)
  Walnuts 1⁄2 Cup (8 tbs), chopped
  Raisins 1⁄2 Cup (8 tbs)
Directions

1. Preheat the oven to 400°F. In a mixing bowl, cream the butter and sugar with an electric mixer at medium speed until light and fluffy. Beat in the egg, vanilla, flour, baking soda, and salt. Stir in the oats, walnuts, and raisins until well mixed. The mixture will be very stiff.
2. Turn the mixture into a greased 9"x 9"x 2" baking pan and spread evenly. Bake, uncovered, for 12 minutes. Cool in the pan, then cut into 24 bars.
