Micro Easy Lemon Coconut Bars
|Refrigerated quick crescent dinner rolls||4 Ounce|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||1⁄4 Teaspoon|
|Lemon peel||1 Teaspoon, grated|
|Fresh lemon juice||1 Tablespoon|
|Coconut||1⁄2 Cup (8 tbs)|
|Nuts||1⁄4 Cup (4 tbs), chopped|
MICROWAVE DIRECTIONS: Unroll dough into 2 long rectangles.
Place in 8-inch square microwave-safe baking dish; press over bottom and 1/2 inch up sides to form crust Firmly press perforations to seal.
Microwave on HIGH for 2 1/2 to 3 minutes or until no longer doughy, rotating dish 1/2 turn halfway through baking.
In large microwave-safe bowl, combine sugar, flow; baking powder; lemon peel, lemon juice and egg; beat until smooth.
Microwave on HIGH for 1 1/2 to 2 minutes or until thickened, stirring once halfway through cooking.
Remove bowl; stir in coconut and nuts.
Spread over partially baked crust Microwave on HIGH for 2 1/2 to 3 minutes or until set rotating once halfway through baking.
Cool completely; sprinkle with powdered sugar Cut into bars.
