Apricot Almond Bars
|Butter/Margarine||3⁄4 Cup (12 tbs)|
|Sifted powdered sugar||1⁄2 Cup (8 tbs)|
|Almond extract||3⁄4 Teaspoon, divided|
|Lemon juice||1 Tablespoon|
|All purpose flour||1 3⁄4 Cup (28 tbs)|
|Finely chopped almonds||3⁄4 Cup (12 tbs), divided|
|Apricot preserves||12 Ounce (1 jar)|
Cream together butter, powdered sugar, 1/4 teaspoon almond extract, and lemon juice.
Combine flour, 1/2 cup chopped almonds, and salt.
Stir dry ingredients into creamed mixture until crumbly.
Reserve 1 cup crumb mixture for the topping.
Pat remaining crumb mixture into an ungreased 13- x 9-inch glass baking dish.
Combine apricot preserves and 1/2 teaspoon almond extract.
Spread over crumb layer in the pan.
Top apricot preserves layer with reserved crumb topping.
Sprinkle with remaining almonds.
Microwave at HIGH 6 to 8 minutes.
Rotate dish 1/2 turn at 3 minute intervals.
Let bars stand 3 to 5 minutes before cutting.
