Quick Breakfast Bars
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Firmly packed light brown sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Rolled oats||1 1⁄2 Cup (24 tbs), uncooked|
|Whole wheat flour||3⁄4 Cup (12 tbs)|
|Peanuts||1 Cup (16 tbs), chopped|
|Seedless raisins||1⁄2 Cup (8 tbs)|
Cream butter, sugar, and brown sugar.
Mix in egg and vanilla.
Stir in oats, flour, soda, salt, peanuts, and raisins.
Pat mixture into a greased 9-inch round glass baking dish.
Let mixture stand 5 minutes.
Microwave at HIGH 8 minutes.
Rotate dish 1/2 turn after 4 minutes.
Cool completely before icing.
Top with Peanut Butter Icing.
