Luscious Lemon Bars
|Crisco shortening||1⁄4 Cup (4 tbs)|
|Granulated sugar||1⁄4 Cup (4 tbs)|
|All purpose flour||1 Cup (16 tbs)|
|Skim milk||1 1⁄2 Teaspoon|
|Granulated sugar||1 Cup (16 tbs)|
|Finely shredded lemon peel||2 Teaspoon (Fresh)|
|Fresh lemon juice||3 Tablespoon|
|All purpose flour||2 Tablespoon|
|Baking powder||1⁄2 Teaspoon|
|Powdered sugar||3⁄4 Cup (12 tbs)|
|Skim milk||1 Tablespoon|
|Finely shredded lemon peel||1⁄4 Teaspoon (Fresh)|
Heat oven to 350Â°F.
Grease 8-inch square pan.
For crust: Place in large bowl.
Beat at medium speed of electric' mixer 30 seconds.
Add granulated sugar and salt (if used).
Beat until fluffy.
Stir in flour and milk until crumbly and well mixed.
Turn into pan.
Press evenly against bottom.
Bake at 350Â°F for 15 minutes.
For filling: Combine egg, egg white, granulated sugar, lemon peel, lemon juice, flour and baking powder.
Beat at high speed 3 minutes.
Pour over hot, baked crust.
Bake at 350Â°F for 25 minutes or until light golden brown.
For drizzle: Combine powdered sugar, milk, vanilla and lemon peel.
Drizzle over top.
Allow to set before cutting into bars.
