Raspberry Jam Bars
|Yellow cake mix||18 Ounce|
|Butter||1⁄3 Cup (5.33 tbs)|
|Raspberry preserves||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Baking powder||1⁄4 Teaspoon|
|Coconut||1 1⁄2 Cup (24 tbs)|
Mix first 3 ingredients with a mixer on low speed until crumbly.
Pour into 10 x 15-inch greased baking dish.
Bake at 350° for 10 to 12 minutes.
Spread raspberry preserves on top.
Mix butter, sugar and eggs.
Beat 1 minute.
Add baking powder, salt and coconut.
Pour over raspberry preserves; spread to cover.
Return to oven and bake 15 to 20 more minutes.
Cool, then cut into bars.
