Cranberry Orange Muesli Bars
|Cranberries||12 Ounce (1 Package Fresh/Frozen)|
|Granulated sugar||1 Cup (16 tbs)|
|Orange peel||1 Teaspoon, grated|
|Orange juice||1 Cup (16 tbs)|
|Fruit muesli||4 Cup (64 tbs), crushed (With Cranberries)|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Packed brown sugar||3⁄4 Cup (12 tbs)|
|Margarine/Butter, softened||3⁄4 Cup (12 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
To prepare Filling: In medium saucepan over medium heat combine cranberries, granulated sugar, orange peel and orange juice.
Cook, stirring frequently, until mixture comes to a boil.
Reduce heat; simmer 15 to 18 minutes, stirring frequently.
To prepare Base/Topping: Preheat oven to 350°F.
In large bowl combine cereal, flour, brown sugar, margarine, baking powder and salt.
Reserve 1 1/2 cups cereal mixture for topping; set aside.
Press remaining cereal mixture firmly and evenly into ungreased 13x9x2-inch baking pan.
Bake 10 minutes.
Spread cranberry filling evenly over base; sprinkle with reserved cereal mixture.
Bake an additional 18 to 20 minutes or until lightly browned.
Cool; cut into bars.
