Rice Cereal Bars And Variations

Ingredients
  Unflavored gelatin 2 Tablespoon (2 Envelope)
  Cold water 1⁄4 Cup (4 tbs)
  Vanilla 2 Teaspoon
  Granulated sugar replacement 2 Teaspoon
  Egg white 1
  Crisp rice cereal 2 Quart
Directions

Sprinkle gelatin over cold water in a small saucepan; allow to soften for 3 minutes.
Cook and stir over low heat until gelatin dissolves; remove from heat.
Stir in the vanilla and sugar replacement; cool slightly.
Beat egg white until soft peaks form, Very slowly, trickle a small stream of gelatin mixture into egg white, beating until all gelatin mixture is blended.
Beat at high speed until egg mixture is light and fluffy.
Pour rice cereal into egg mixture; fold to completely blend and coat the cereal.
Transfer to a 13 x 9 x 2 in. (33 x 23 x 5 cm) greased pan.
Chill in refrigerator.
Cut into 18 bars.
