Pineapple Raisin Bars
|Thawed frozen unsweetened pineapple juice concentrate||1 Cup (16 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs), melted|
|Vanilla extract||1 Teaspoon|
|All purpose flour||1 1⁄3 Cup (21.33 tbs)|
|Uncooked rolled oats||2⁄3 Cup (10.67 tbs)|
|Baking soda||1 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Ground ginger||1⁄2 Teaspoon|
|Ground nutmeg||1⁄8 Teaspoon|
|Canned crushed pineapple in unsweetened juice||8 Ounce, well drained (1 Can)|
|Lightly toasted chopped pecans||3⁄4 Cup (12 tbs)|
|Golden raisins||1⁄2 Cup (8 tbs)|
Preheat oven to 350°F.
Beat eggs in large bowl.
Blend in pineapple juice concentrate, butter and vanilla.
Add flour, oats, baking soda, salt and spices; mix well.
Stir in pineapple, pecans and raisins.
Spread batter into greased 12 X 8-inch baking dish.
Bake 18 to 20 minutes or until firm.
Cool completely on wire rack.
Cut into bars.
Store in airtight container.
