Coconut Chewies

Ingredients
  Plain flour 4 Ounce (About 100 Gram)
  Soda bicarbonate 1 1⁄2 Teaspoon
  Butter/Margarine 2 Ounce (About 50 Gram)
  Desiccated coconut 4 Ounce (About 100 Gram)
  Caster sugar 3 Ounce (About 75 Gram)
  Golden syrup 3 Ounce (About 75 Gram)
Directions

Lightly grease two baking trays.
Sift the flour and bicarbonate of soda into a bowl.
Rub in the butter or margarine until the mixture resembles fine breadcrumbs.
Stir in the coconut and sugar, then bind to a soft dough with the syrup.
Divide the mixture into 25 and form each piece into a small ball the size of a walnut.
Place the coconut chews at intervals on the prepared baking trays, allowing room for them to spread.
Bake in a moderate oven (180C, 350F, gas 4) for 12-15 minutes, or until golden brown.
Allow the biscuits to cool on the trays for a minute before transferring them to a wire rack to cool completely.
