|Plain flour||4 Ounce (About 100 Gram)|
|Soda bicarbonate||1 1⁄2 Teaspoon|
|Butter/Margarine||2 Ounce (About 50 Gram)|
|Desiccated coconut||4 Ounce (About 100 Gram)|
|Caster sugar||3 Ounce (About 75 Gram)|
|Golden syrup||3 Ounce (About 75 Gram)|
Lightly grease two baking trays.
Sift the flour and bicarbonate of soda into a bowl.
Rub in the butter or margarine until the mixture resembles fine breadcrumbs.
Stir in the coconut and sugar, then bind to a soft dough with the syrup.
Divide the mixture into 25 and form each piece into a small ball the size of a walnut.
Place the coconut chews at intervals on the prepared baking trays, allowing room for them to spread.
Bake in a moderate oven (180C, 350F, gas 4) for 12-15 minutes, or until golden brown.
Allow the biscuits to cool on the trays for a minute before transferring them to a wire rack to cool completely.
