Key Lime-Coconut Bars
|Powdered sugar||1⁄2 Cup (8 tbs)|
|Butter||1 Cup (16 tbs) (At Room Temperature)|
|Sugar||2 Cup (32 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Key lime juice||5 Tablespoon|
|Grated coconut||1 1⁄2 Cup (24 tbs)|
|Grated key lime zest/Regular lime||1 Teaspoon|
|Coconut||1 Tablespoon, toasted (For Garnish)|
Preheat oven to 350Â°.
Grease and flour lightly a 9 x 3-inch baking pan.
In a food processor, combine the 2 cups flour, 1/2 cup powdered sugar and butter.
Pat evenly into pan.
Bake for 15 minutes.
Reduce oven to 325Â°.
Beat eggs in a medium-size mixing bowl.
Add sugar, 4 tablespoons flour, baking powder, Key lime juice, coconut and lime zest.
Stir until well mixed.
Pour mixture over crust.
Bake for about 35 minutes or until top is firm.
Let cool slightly.
Sprinkle with powdered sugar and toasted coconut.
Cut while still just a little warm
