Holiday Nut Bars

Ingredients
  Flour 1⁄2 Cup (8 tbs)
  Light brown sugar 1 Cup (16 tbs), sifted
  Salt 1⁄4 Teaspoon
  Vanilla 1 Teaspoon
  Instant coffee 1 Tablespoon, dry
  Margarine 1⁄2 Cup (8 tbs), melted
  Eggs 2
  Nuts 1 Cup (16 tbs), chopped
Directions

Preheat oven to 350°F.
Grease 8x8x2 inch pan.
Sift flour, salt and coffee.
Beat eggs; beat in sugar and vanilla.
Stir in flour, salt and coffee.
Add margarine and nuts.
Mix well.
Spread in pan.
Bake 25 to 30 minutes.
Cut in bars, or squares, while warm. (For crisp bars, bake in 10 x 10 inch pan for about 12 to 15 minutes.)

These nut bars were so good! I added a little more coffee and vanilla for some extra kick. For nuts, I added Planters peanuts, almonds, cashews and sunflower seeds, as well as dried cranberries and raisons. Best ever!
