Dessert - Mixed Berry Cheesecake Bars

Theres nothing better than a good cookout for the 4th of July. Delicious food, cocktails, fun, and now mixed berry cheesecake bars. I wanted to make a dessert for the 4th that was red, white, and blue (obviously) and when I saw the delicious berries at my grocery story I knew exactly what to make. These are super easy to make and you can make them the day before your party to save you some time.

Ingredients

For the crust
Graham cracker crumbs 1 1/2 Cup (24 tbs)
Sugar 1 Teaspoon
Butter 1/4 Cup (4 tbs) , melted
Cooking spray 2 Dash
For the filling
Cream cheese 12 Ounce (at room temperature)
Eggs 3 Large
Milk 1/4 Cup (4 tbs)
Cornstarch 2 Tablespoon
Lemon zest 1/2 Teaspoon
Fresh lemon juice 2 Tablespoon
Vanilla extract 1 Teaspoon
Fresh blueberries 1 Cup (16 tbs) (more or less, as desired)
Fresh raspberries 3/4 Cup (12 tbs) (more or less, as desired)

Directions

GETTING READY

Preheat the oven to 350 degrees F. Line a baking pan with aluminum foil and grease with cooking spray. Set aside.

 

MAKING

For the crust – In a large bowl, mix together the graham cracker crumbs, sugar, and melted butter.

Add in the graham cracker mixture and firmly pat down to make an even layer.

For the filling – in a large bowl, beat the cream cheese and sugar with an electric mixer until smooth.

Add in the eggs, lemon zest, lemon juice, and vanilla extract and mix together.

In another small bowl, whisk together the corn-starch and cream until the corn-starch has dissolved.

Carefully pour the batter into the crust pan and top with fresh blueberries and raspberries.

Bake in the oven for 35-37 minutes.

Take out from the oven and let it cool completely before serving.

 

SERVING

Slice and serve the cheesecake for the dessert.
