|All purpose flour||1 1⁄2 Cup (24 tbs) (Unsifted)|
|Cornmeal/Coarse oatmeal||1⁄2 Cup (8 tbs)|
|Butter/Bacon dripping / shortening||4 Tablespoon|
|Buttermilk/Sour milk||1 Cup (16 tbs)|
In a bowl, stir the first four ingredients together.
Rub in the butter and then quickly stir in buttermilk to make a soft dough.
Knead slightly on a lightly floured board.
Pat out 1/2 inch thick.
Sprinkle an electric frying pan or cast-iron pan with flour and heat, setting electric pan at 375F.
Cut dough into 10 or 12 squares for easier turning.
Arrange dough 1/2 inch apart in preheated pan and bake about 7 minutes or until underside is a light nut brown.
Turn and continue cooking 7 minutes.
Serve hot, split, with butter or maple syrup.
