Crispy Batter Fried Bananas
|Rice flour||1 Cup (16 tbs)|
|Coconut milk||1⁄2 Cup (8 tbs)|
|Egg whites||2 , stiffly beaten|
|Flaked coconut||1⁄2 Cup (8 tbs)|
|Bananas||5 , peeled and sliced in 1-inch lengths|
|Fat||2 Cup (32 tbs) (For Deep Frying)|
Sift the flour and salt into a bowl; beat in the coconut milk, oil, and egg yolks until smooth.
Fold in the egg whites and coconut.
Dip the bananas into the batter.
Heat the fat to 380Â°.
Fry a few pieces at a time until delicately browned.
Drain and serve hot.
