Plantain Skin Salan

Ingredients
  Shredded plantain skin 2 Cup (32 tbs)
  Turmeric 1⁄4 Teaspoon
  Salt To Taste
  Curry leaves 4
  Chili powder 1 Teaspoon
  Cumin seeds 1⁄2 Teaspoon
  Onion 1 Large, chopped
  Ginger garlic paste 1⁄2 Teaspoon
  Oil 3 Tablespoon
  Potato 1 Large, cubed
Directions

Cook plantain skin in boiling water to which turmeric and salt have been added.
Drain.
Heat oil and saute onion, curry leaves, chilli powder, cummin seed and ginger-garlic paste, add and fry potato cubes.
Add plantain skins and a little warm water and cook for 5-7 mins.
Eat with chappatis.
