Baked Bananas

Ingredients
  Bananas 4
  Lemon juice 2 Tablespoon
  Honey 2 Tablespoon
  Dry sherry/Rum / orange juice 1⁄4 Cup (4 tbs)
  Margarine/Butter 2 Tablespoon
  Apricot jam 2 Tablespoon
  Shredded coconut 1⁄3 Cup (5.33 tbs)
Directions

MAKING
1. Peel the bananas and add to a shallow dish; brush with lemon juice pour honet and sherry, rum or orange juice and dot with margarine
2. Cover the dish with kitchen paper and microwave for four minutes; add dollops of apricot jam on top, sprinkle coconut and microwave for another minute

SERVING
3. Goes well served hot with pouring cream or ice ceam
