Baked Bananas With Vanilla Cream
|Bananas||6 (green tipped)|
|Apricot preserves||12 Ounce|
|Orange juice||1⁄2 Cup (8 tbs)|
|Golden rum||1⁄4 Cup (4 tbs)|
|Flaked coconut||1⁄2 Cup (8 tbs)|
|Vanilla ice cream||1 Pint|
1. Preheat oven to 375 degrees.
2. In a large baking dish, peel the bananas and then layer them in the dish
3. In a shallow saucepan, melt the preserved and remove from heat. Stir in the orange juice and the rum and pour over the bananas. Sprinkle with coconut. Bake in a hot oven for 20 minutes till done.
4. Top with ice cream and serve cold
