Mini Choc Banana Loaves
|Plain flour||250 Gram|
|Baking powder||2 Teaspoon|
|Unsalted butter||125 Gram, softened|
|Caster sugar||250 Gram|
|Ripe bananas||4 , mashed|
|Eggs||2 , lightly beaten|
|Vanilla extract||1 Teaspoon|
|Chocolate chips||175 Gram (Dark / Milk)|
Preheat the oven to 180°C/gas 4.
Sift the flour and baking powder into a large bowl.
Mix the butter, sugar, banana, eggs, vanilla extract and chocolate chips in a separate bowl.
Add to the dry ingredients and stir to combine, being careful not to over-mix.
Divide the batter between 8 lightly greased, lined 150ml-capacity mini loaf tins, or 10 x 125ml muffin tins.
Bake for 25-30 minutes, or until golden brown and when a skewer comes out clean if inserted into the middle of a loaf.
Leave to cool in the tins for 5 minutes before turning them out onto a wire rack to cool.
