Place the unpeeled bananas in a shallow baking pan. Bake the bananas in a 325° oven for 20 to 25 minutes or till a fork will pierce the bananas easily.
To serve, make 2 lengthwise slits, 1/2 to 3/4 inch apart, through the peel of each banana. Remove the peel between the slits.
Sprinkle each banana with a little lime or lemon juice and a little brown sugar. Top each banana with a few finely chopped peanuts.
