Lightly Cooked Bananas

Ingredients
18 ripe but firm bananas
2 large tomatoes, finely chopped
12 green chillies deseeded and finely chopped
1" smashed ginger
Vi cup finely chopped fresh coriander
2 sprigs curry leaves
2 tsps. cumin, broiled and coarsely ground
2 tsps. coriander seeds, broiled and coarsely ground
1 tsp. poppy seeds, broiled and coarsely ground
Salt
Pure Ghee
Directions

• Place 1/2 a cup of pure ghee in a large, flat bottomed vessel. When the ghee heats up, add the curry sprigs, ginger, cumin, coriander and poppy seeds and mix well for one minute. Then add the green chillies and tomatoes and allow the tomatoes to dry up a little.
• Toss in the bananas, each skinned and cut into 4-6 pieces and mix gently. Sprinkle with salt. Allow to remain on very low heat for 7 minutes and remove from the fire.
• Serve with hot parathas for breakfast.
• It makes a great change from jam, cheese and eggs.
