Banana Surprise

Ingredients
  Bananas 4 Medium
  Fresh lemon juice 60 Milliliter (4 Tablespoon)
  Flaked almonds 2 Ounce (50 Grams)
  Silken tofu/1/2 pint natural yogurt 10 Ounce (300 Grams)
  Concentrated apple juice 30 Milliliter (2 Tablespoon)
Directions

1. Peel the bananas and slice into 1 inch (2.5cm) chunks. Put into a casserole or ovenproof dish and pour over the lemon juice.
2. Toast the almonds lightly under a preheated moderate grill for 5-10 minutes. Add to the banana. Cover and bake in a preheated oven at Gas Mark 4,350°F, 180°C for 15 minutes.
3. Meanwhile, mix the tofu or yogurt with the concentrated apple juice. Do this in a blender or food processor if using tofu.
4. Pour the tofu or yogurt over the bananas. Serve straightaway garnished with lemon slices.
