|Maraschino cherries||1 Cup (16 tbs)|
|Amber rum||1⁄2 Cup (8 tbs), warmed and flamed|
|Whipped cream||1 Cup (16 tbs)|
|Vanilla extract||1⁄4 Teaspoon|
1. Peel bananas and halve them lengthwise. Arrange halves flat side down in the shape of an open fan on a round silver or glass dish.
2. Boil water and sugar together at a rolling boil 4 minutes. Add cherries, reduce heat, and simmer 2 minutes. Remove some of the cherries with a perforated spoon and arrange in a design on upper portion of fan.
3. Put the remaining fruit with syrup into an electric blender along with flamed rum; process until pureed or force mixture through a food mill. Spoon over upper part of fan.
4. Blend whipped cream and vanilla extract. Using a pastry bag and decorating tube, make a thick border around upper portion of fan to simulate lace.
