Maduros (fried ripe plantains) are one of the most served side dishes in any Cuban home or restaurant. I love them in so many ways, but how do I make them healthy and eliminate the frying process? I grill them, yea!
Be sure to use very ripe plantains for this recipe. The skin should be completely black. The blacker the skin on the plantain, the sweater the plantain will be.
Preheat grill to high. Cut the ends off the plantains and cut each crosswise into 2″ pieces. Grill the plantains, turning occasionally, for 10-15 minutes, or until the skins are charred and the cut ends are brown. The plantains should be soft to the touch. Trim off the skins, place in a serving dish, drizzle with honey.
