|Honey||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Teaspoon|
|Shredded coconut||1 Cup (16 tbs), toasted|
Combine honey and lemon juice.
Peel bananas; cut diagonally in thirds.
Brush honey mixture on bananas; roll in coconut.
To toast coconut, spread thin layer of coconut in shallow baking pan.
Toast in oven at 350° till lightly browned, about 6 to 7 minutes. (Stir coconut or shake pan often during baking to toast evenly.)
