Chocolate Bourbon Balls
|Semi sweet chocolate morsels||6 Ounce|
|Bourbon||1⁄2 Cup (8 tbs)|
|Light corn syrup||3 Tablespoon|
|Vanilla wafer crumbs||2 1⁄2 Cup (40 tbs)|
|Powdered sugar||1⁄2 Cup (8 tbs)|
|Chopped pecans||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
Place chocolate morsels in top of a double boiler; bring water to a boil.
Reduce heat to low; cook until chocolate melts, stirring occasionally.
Remove from heat; stir in bourbon and corn syrup.
Combine crumbs, powdered sugar, and pecans; mix well.
Stir into chocolate mixture; let stand 30 minutes.
Shape into 1-inch balls; roll in sugar.
Store in an airtight container in refrigerator.
