Pistachio Cheese Balls

Ingredients
  Ricotta cheese 500 Milliliter
  Chopped parsley 60 Milliliter
  Red pimento 125 Milliliter, diced
  Salt 1 Milliliter
  Cracked black pepper 1 Milliliter
  Pistachio nuts 500 Milliliter, crushed
Directions

In a food processor, combine the ricotta, parsley, pimento, salt and pepper, process until smooth.
Remove and roll into tiny balls.
Place the pistachio nut meats into a mixing bowl and roll the cheese balls through to coat.
Place cheese balls on a waxed paper lined serving platter, refrigerate for 1 hour before serving.
