|Frozen chopped spinach||20 Ounce, thawed, drained and squeezed dry (2 packages, 10-ounce each)|
|Herb stuffing mix||2 Cup (32 tbs)|
|Onion||1 Large, grated|
|Freshly grated parmesan cheese||1 Cup (16 tbs)|
|Butter||1⁄2 Cup (8 tbs) (1 1/2 sticks, room temperature)|
|Poultry seasoning||1 Teaspoon|
|Freshly ground pepper||To Taste|
Preheat oven to 350°F.
Beat eggs lightly in large bowl.
Add remaining ingredients and blend well.
Roll into walnut-size balls.
Transfer to baking sheet.
Bake until golden, about 20 minutes.
Spinach balls can be partially baked for 10 minutes, cooled and frozen.
Reheat thawed balls in 350°F oven for about 10 to 15 minutes before serving hot.
