|Grated swiss cheese||2 Ounce (60 Gram)|
|Grated parmesan cheese||2 Ounce (60 Gram)|

|Eggs||2 , lightly beaten|
|Unprocessed bran||1 Ounce (1 Cup, 30 Gram)|
|Finely chopped almonds||3 Tablespoon|
|Vegetable oil||2 Cup (32 tbs) (For Deep Frying)|
1. Place carrots, orange rind, Swiss cheese, Parmesan cheese, mint, black pepper to taste and half the egg mixture in a bowl (a) and mix to combine. Shape carrot mixture into balls.
2. Place bran and almonds in a bowl and mix to combine. Roll balls in flour, then dip in remaining egg mixture and roll in bran mixture (b). Place balls on a plate lined with plastic food wrap and refrigerate for 30 minutes.
3. Heat oil in a large saucepan until a cube of bread dropped in browns in 50 seconds (c). Cook balls, a few at a time, for 4-5 minutes or until golden (d) and heated through. Drain on absorbent kitchen paper and serve immediately.
