Spinach Balls

Ingredients
  Frozen chopped spinach 20 Ounce, thawed and squeezed dry (2 Packages, 10 Ounce Each)
  Herb stuffing mix 2 Cup (32 tbs), crushed
  Parmesan cheese 5 Ounce, freshly grated, firmly packed to make 1 cup (1 Wedge)
  Butter 1⁄2 Cup (8 tbs), melted (1 Stick)
  Green onions 4 Small, finely chopped
  Eggs 3
  Freshly grated nutmeg 1 Dash
  Mustard sauce 1⁄4 Cup (4 tbs) (Adjust Quantity As Needed)
Directions

Combine all ingredients except sauce in large bowl and mix well.
Shape into 1-inch balls.
Cover and refrigerate or freeze until ready to bake.
Preheat oven to 350°F.
Set balls on ungreased baking sheet and bake until golden brown, about 10 to 15 minutes.
Serve with Mustard Sauce.
