|Frozen chopped spinach||20 Ounce, thawed and squeezed dry (2 Packages, 10 Ounce Each)|
|Herb stuffing mix||2 Cup (32 tbs), crushed|
|Parmesan cheese||5 Ounce, freshly grated, firmly packed to make 1 cup (1 Wedge)|
|Butter||1⁄2 Cup (8 tbs), melted (1 Stick)|
|Green onions||4 Small, finely chopped|
|Freshly grated nutmeg||1 Dash|
|Mustard sauce||1⁄4 Cup (4 tbs) (Adjust Quantity As Needed)|
Combine all ingredients except sauce in large bowl and mix well.
Shape into 1-inch balls.
Cover and refrigerate or freeze until ready to bake.
Preheat oven to 350°F.
Set balls on ungreased baking sheet and bake until golden brown, about 10 to 15 minutes.
Serve with Mustard Sauce.
