|Neufchatel cheese||3 Ounce, softened|
|Shredded cheddar cheese||1⁄2 Cup (8 tbs)|
|Finely shredded carrot||1 Cup (16 tbs)|
|Grape nuts cereal||1⁄2 Cup (8 tbs)|
|Finely snipped parsley||2 Tablespoon|
In medium mixer bowl beat Neufchatel cheese, Cheddar cheese, and honey together till blended.
Stir in shredded carrot.
Cover and chill 30 minutes.
Shape into fourteen 1-inch balls; cover and chill.
Just before serving, roll balls in a mixture of cereal and parsley, pressing the cereal mixture into cheese to coat.
