Carrot Balls

Ingredients
  Neufchatel cheese 3 Ounce, softened
  Shredded cheddar cheese 1⁄2 Cup (8 tbs)
  Honey 1 Teaspoon
  Finely shredded carrot 1 Cup (16 tbs)
  Grape nuts cereal 1⁄2 Cup (8 tbs)
  Finely snipped parsley 2 Tablespoon
Directions

In medium mixer bowl beat Neufchatel cheese, Cheddar cheese, and honey together till blended.
Stir in shredded carrot.
Cover and chill 30 minutes.
Shape into fourteen 1-inch balls; cover and chill.
Just before serving, roll balls in a mixture of cereal and parsley, pressing the cereal mixture into cheese to coat.
