Cheese And Carrot Balls

Ingredients
  Neufchatel cheese 3 Ounce, softened
  Shredded low calorie processed cheese 2 Ounce (1/2 Cup)
  Shredded carrot 1 Cup (16 tbs) (Finely Shredded)
  Grape nuts cereal 1⁄3 Cup (5.33 tbs)
  Finely snipped parsley 2 Tablespoon
Directions

In bowl beat Neufchdtel cheese and process cheese.
Pat shredded carrot dry with paper toweling.
Stir shredded carrot into cheese mixture.
Cover and chill at least 1 hour.
Combine cereal and parsley; set aside.
Shape cheese-carrot mixture into sixteen balls about 1 inch in diameter.
Roll balls in cereal-parsley mixture, pressing into cheese-carrot balls to coat.
Cover; chill up to 1 hour.
