Honey Ginger Bourbon Balls

Ingredients
  Gingersnap cookie crumbs 1 Cup (16 tbs)
  Powdered sugar 1 1⁄4 Cup (20 tbs), divided
  Finely chopped pecans/Walnuts 1 Cup (16 tbs)
  Unsweetened chocolate 1 Ounce (1 Square, 1 Ounce Each)
  Honey 1 1⁄2 Tablespoon
  Bourbon 1⁄4 Cup (4 tbs)
Directions

Combine crumbs, 1 cup of the sugar and the nuts in large bowl.
Combine chocolate and honey in small bowl over hot water; stir until chocolate is melted.
Blend in bourbon.
Stir bourbon mixture into crumb mixture until well blended.
Shape into 1-inch balls.
Sprinkle remaining 1/4 cup powdered sugar over balls.
Refrigerate until firm.
