Honey Ginger Bourbon Balls
|Gingersnap cookie crumbs||1 Cup (16 tbs)|
|Powdered sugar||1 1⁄4 Cup (20 tbs), divided|
|Finely chopped pecans/Walnuts||1 Cup (16 tbs)|
|Unsweetened chocolate||1 Ounce (1 Square, 1 Ounce Each)|
|Honey||1 1⁄2 Tablespoon|
|Bourbon||1⁄4 Cup (4 tbs)|
Combine crumbs, 1 cup of the sugar and the nuts in large bowl.
Combine chocolate and honey in small bowl over hot water; stir until chocolate is melted.
Blend in bourbon.
Stir bourbon mixture into crumb mixture until well blended.
Shape into 1-inch balls.
Sprinkle remaining 1/4 cup powdered sugar over balls.
Refrigerate until firm.
