Bell Pepper Cheese Balls
|Cheddar cheese||1 Pound, grated|
|Cream cheese||8 Ounce, softened|
|Green bell pepper||To Taste, coarsely chopped|
|Sweet red pepper||To Taste, coarsely chopped|
|Fresh parsley||1⁄4 Cup (4 tbs), chopped|
|Nuts||1⁄4 Cup (4 tbs), finely chopped|
|Crackers||1 Cup (16 tbs)|
In a frying pan, cook bacon until crisp.
Drain on a paper towel to soak up as much fat as possible.
In a bowl, combine bacon, both cheeses and bell peppers.
Divide into 3 equal parts.
In a food processor, mix each third to a ball.
Shape total mixture into one big ball or several smaller ones.
In a large bowl, combine parsley and nuts.
Dredge each ball with mixture.
Seal in plastic wrap or aluminum foil.
Refrigerate at least 24 hours.
