Spiced Up Egg Salad Bagel

An easy curried egg salad on a bagel
Ingredients
  Bagel 1 (Sesame Variety, Preferably Ray's New York)
  Hard boiled egg 4 , chopped
  Hot curry powder 1 Teaspoon
  Low fat mayonnaise 2 Tablespoon
  Lettuce 20 Gram
Directions

MAKING
1. Cut the bagel horizontally into half.
2. In a electric toaster, toast the bagel until it turns crisp.
3. In a mixing bowl, place eggs, add curry powder and mayonnaise,combine all ingredients well
4. On he lower half of the bagel, place lettuce, spoon a generous amount of the prepared egg salad, cap it with the top half of the bagel.

SERVING
5. Serve as breakfast with fresh juice, tea or coffee.

Story
I used to stop at this bagel joint down the street from my house in Dallas almost every morning. I was very limited in what I would get - curried egg salad with lettuce on a sesame bagel was one of the few.
Today, the Chef shows us a recipe that would give us a break from the monotony of hamburgers. Spiced Up Egg Salad Bagel Burger is a delicious change. Its spicy, has eggs instead of meat sandwiched in bagel. Ideal for a quick breakfast. There is scope for jazzing up with more spice, if you like.

Just how many recipes are you going to do with bagels? lol I like egg salad but I find it to squish out the sides too much with something as crunchy as a bagel.

As many as I can! I love bagels... The squishing is a slight problem but this isn't really something you want to be eating in the car!

These are Ray's New York Bagels. They are made by Just Bagels! For a frozen bagel they are amazingly good - come out of the toaster nice and crispy on the outside and chewy on the inside! :) Nikko

I love curried egg salad or fresh shrimp curried salad on sour dough sliced bread. It isn't so heavy and the sour dough bread is a great taste compliment to curry-sort of like tamarind is in curry or lime juice.

Great recipe! You are right...everything tastes better on a good bagel! (And of course if anyone wants to know the basics like How to Boil an Egg or Washing Lettuce - I've got that covered!)
