Ingredients
  Buttermilk/Milk 125 Milliliter (1/2 cup)
  Egg 1
  Vegetable oil 15 Milliliter (1 tablespoon)
  All purpose flour 125 Milliliter (1/2 cup)
  Cornmeal 75 Milliliter (1/3 cup)
  Granulated sugar 50 Milliliter (1/4 cup)
  Baking powder 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Corn kernels 50 Milliliter, drained (1/4 cup)
  Bacon strips 5 , cooked and crumbled
Directions

In blender, combine buttermilk, egg and oil; process until blended.
Add flour, cornmeal, sugar, baking powder and salt; mix until blended, scraping sides of blender, if necessary.
Spoon half the batter into 6 greased muffin cups.
Sprinkle with corn and half the bacon; top with remaining batter.
Sprinkle with remaining bacon.
Bake in 375°F (190°C) oven for 18 to 20 minutes or until firm to the touch.
