Golden Cornmeal Cakes With Bacon
|Buttermilk/Milk||125 Milliliter (1/2 cup)|
|Vegetable oil||15 Milliliter (1 tablespoon)|
|All purpose flour||125 Milliliter (1/2 cup)|
|Cornmeal||75 Milliliter (1/3 cup)|
|Granulated sugar||50 Milliliter (1/4 cup)|
|Baking powder||1 Teaspoon|
|Corn kernels||50 Milliliter, drained (1/4 cup)|
|Bacon strips||5 , cooked and crumbled|
In blender, combine buttermilk, egg and oil; process until blended.
Add flour, cornmeal, sugar, baking powder and salt; mix until blended, scraping sides of blender, if necessary.
Spoon half the batter into 6 greased muffin cups.
Sprinkle with corn and half the bacon; top with remaining batter.
Sprinkle with remaining bacon.
Bake in 375Â°F (190Â°C) oven for 18 to 20 minutes or until firm to the touch.
