Halloumi Cheese With Bacon

  Halloumi cheese 7 Ounce, cut into 6 slices (200 Gram / 1 Block)
  Streaky bacon rashers 6 , rinded
  Olive oil 1 Tablespoon
  Freshly ground black pepper To Taste
  Pita breads 3
  Shredded lettuce 1⁄2 Cup (8 tbs) (As Required)
  Cherry tomatoes 12 , quartered (For Garnish)

Stretch the bacon rashers with the back of a knife.
Wrap one around each piece of cheese.
Secure with a cocktail stick (toothpick), if necessary.
Place in a shallow dish and drizzle with a little olive oil.
Add a good grinding of black pepper.
Barbecue for 2-3 minutes on each side until the bacon is crisp and the cheese is golden.
Meanwhile, warm the pitta breads briefly on both sides on the barbecue.
Cut in half widthways.
Open up slightly to form pockets.
Fill with shredded lettuce.
Put one of the cheese and bacon parcels in each and serve garnished with quartered cherry tomatoes.
