Fillet Of Beef With Bacon

  Beef fillet 2 Pound
  Corn oil 1⁄4 Cup (4 tbs) (Mazola)
  Bacon slices 4 Medium
  Carrots 4 , diced
  Turnips 4 , diced
  Potatoes 4 , diced
  Butter 6 Tablespoon
  Water 3 Tablespoon
  Salt To Taste
  Pepper To Taste

Tie the fillet with string to keep its shape while baking.
Brown the meat on all sides in the heated oil.
Then place on a baking pan.
Sprinkle with salt and pepper.
Cover with the slices of bacon.
Bake at 350 degrees for about twenty minutes or until the meat is tender.
Meanwhile, cook the carrots, turnips, and potatoes separately with two tablespoons each of butter and one tablespoon each water.
Surround the cooked fillet with the vegetables and serve.
Or you can prepare small tarts and fill them with the vegetables or use mushrooms, tomatoes or artichoke bottoms to fill with the vegetables.
Then you can call your dish Fillet of Beef Renaissance or Fillet of Beef Richelieu.
