Cheddar Bacon Muffins
|All purpose flour||2 Cup (32 tbs)|
|Granulated sugar||2 Tablespoon|
|Baking powder||1 Tablespoon|
|Grated cheddar cheese||1⁄2 Cup (8 tbs)|
|Milk||1 Cup (16 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
In a large bowl, combine flour, sugar, baking powder, salt, cheese and bacon.
Blend well and make a well in the center.
In another bowl, whisk together egg, milk and oil.
Pour into dry ingredients and stir just until moist and lumpy.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for 20 to 25 minutes.
VARIATIONS: Increase grated Cheddar cheese to 1 cup (250 mL).
Use the added 1/2 cup (125 mL) to sprinkle over tops before baking.
Replace milk with 1 can (10 oz [284 mL]) of any cream soup such as mushroom or chicken.
Omit the bacon and substitute 2/3 cup (150 mL) chopped cooked ham.
Substitute Swiss cheese for Cheddar and increase oil to 1/3 cup (75 mL).
