Pate Maison in Bacon
|Chicken livers||3 Pound|
|Butter||1 Cup (16 tbs)|
|Garlic granules||2 Tablespoon|
|Onions||2 Medium, chopped|
|Ground pork||2 Pound|
|Ground veal||1 Pound|
|Parsley flakes||3⁄4 Cup (12 tbs)|
|Poultry seasoning||2 Tablespoon|
|Brandy||3⁄4 Cup (12 tbs)|
|Eggs||4 Large, beaten|
|Black pepper||1⁄2 Tablespoon|
|Capers||1⁄2 Cup (8 tbs)|
|Sliced bacon||3 Pound|
1)Preheat oven to 400 degrees
2)Take a pan, and saute the liver in half the butter.
3)Add one tablespoon garlic granules
4)Once the liver is cooked thoroughly,cool and chop.
5)Now saute the onions in remaining butter and 1 tablespoon garlic granules
6)Take a bowl, mix the liver,sauteed onions,pork,veal,parsley,poultry seasoning,brandy,eggs,salt,pepper and capers.
7)Mix it well.
8)Take three loaf pans with bacon,ensure the strips hang on sides so they can be folded.
9)Arrange 3-4 bay leaves in each pan
10)Now place the pans in shallow baking dish,and fill with 1 inch hot water.
11)Cover this with foil and bake for one hour
12)Once done,remove foil and cook for additional 15 minutes
13)Let it cool, wrapped in foil.
14)Slice and serve
