Grilled Bacon and Tomatoes
|Butter||1 Tablespoon (adjust quantity as needed)|
1 Preheat the grill and allow to get it really hot.
2 Using kitchen scissors, cut the rinds off the rashers.
3 Cut the tomatoes into halves.
4 Season well and put a knob of butter on each.
5 Place on a rack, reduce the heat and cook gently.
6 Turn the tomatoes.
7 Grill the bacon on one side for about 2 minutes a side (as per the thickness)
8 Turn the rashers when they are crisp and brown.
9 Transfer the bacon and tomatoes on to hot plates and serve.
