Broiled Shad Roe With Bacon
|Shad roe||2 Pound (Use 6 Pairs)|
|Crumbled dried rosemary||1⁄2 Teaspoon|
|Buttered toast slices||6|
|Watercress||1⁄2 Bunch (50 gm)|
1 Prick the membrane of shad roe with a needle.
2 In a saucepan, place the fish.
3 Add water to the pan, just enough to cover the fish.
4 Add the seasoning and simmer for 5 minutes.
5 Drain the the fish and cut into 6 pieces.
6 On a rack in a broiler pan, place the roe pieces and cover with slices of bacon.
7 Put 4 inches below source of heat and broil until bacon is crisp.
8 Serve on toast and garnish with watercress.
