Green Beans and Bacon Salad
|Bacon slices||6 , coarsely chopped|
|Fresh green beans/18 ounces/ 2 package frozen whole green beans, thawed||1 1⁄2 Pound, trimmed and cooked crisp tender|
|Yellow bell pepper/Red/green bell pepper||1 Medium, coarsely chopped|
|Olive oil||3 Tablespoon|
Cook bacon in skillet over mediumheat until crisp, stirring at least twice.
Remove bacon with a slotted spoon; transfer to paper towel to drain.
Pour all but 1 tablespoon drippings from skillet.
Add all remaining ingredients, except bacon.
Cook about 3 minutes, stirring constantly until beans are heated through.
Transfer to a large bowl.
Stir in bacon.
Cover and refrigerate overnight.
Can be prepared at least 2 days before serving.
Serve at room temperature.
This salad is great with fried chicken!
