Hominy Bacon And Egg Scramble
|Canned hominy||1 Pound, drained (1 Can)|
|Eggs||2 , lightly beaten with 1/4 cup milk|
|Milk||1⁄4 Cup (4 tbs)|
|Grated parmesan cheese||2 Tablespoon|
1) In a large heavy skillet, heat the bacon until brown then remove on a paper towel, crumble and keep aside.
2) In 1/4 cup drippings, stir-fry the hominy over a medium heat for 2-3 minutes.
3) Add and scramble the eggs, then stir in the cheese and pepper.
4) Spoon in warm serving plates, top with the bacon and serve immediately.
