Shad Roe With Bacon

Ingredients
  Shad roe 4 (2 Large Pairs)
  Butter 2 Tablespoon
  Bacon strips 4
  Lemon 1
  Parsley sprigs 4
Directions

Dry roe between paper towels.
Melt butter until it sizzles.
Add roe and fry until golden brown on both sides.
Be careful when turning roe not to break the skin.
Fry bacon until crisp and break into small pieces.
Put bacon over roe on hot platter.
Garnish with lemon quarters and parsley.
Makes 4 servings.
