Ruby Bacon Chops
|Lean bacon loin chops||4|
|Red currant jelly||45 Milliliter (3 Tablespoon)|
|Black pepper||To Taste|
1. Cut away all the peel and pith from the grapefruit, using a sharp knife, and carefully remove the segments, catching the juice in a bowl.
2. Fry the bacon chops in a non-stick frying pan without fat, turning them once, until golden and cooked.
3. Add the reserved grapefruit juice and redcurrant jelly to the pan and stir until melted. Add the grapefruit segments, then season with pepper and serve hot with fresh vegetables.
