Potato Skins With Cheese And Bacon
|Baking potatoes||4 Medium|
|Turkey bacon slices||4|
|Shredded reduced fat sharp cheddar cheese||3 Ounce (3/4 Cup)|
|Fat free sour cream||1⁄4 Cup (4 tbs)|
|Minced fresh chives/Finely chopped green onion||1 Tablespoon|
1. Preheat oven to 425°.
2. Bake potatoes at 425° for 1 hour or until tender. Cut each potato in half lengthwise; let cool slightly. Scoop out potato pulp, leaving a 1/4-inch-thick shell. Reserve pulp for another use.
3. Place potato shells on a baking sheet. Spray inside of shells with cooking spray, and bake at 425° for 8 minutes or until crisp; set shells aside.
4. Cook bacon according to the package directions, and let cool slightly. Chop cooked bacon; set aside.
5. Sprinkle cheese evenly in potato shells. Bake at 425° for 5 minutes or until cheese melts. Sprinkle bacon evenly over cheese; top each serving with sour cream and chives.
