Bacon Buns

Ingredients
  Low salt lean smoked canadian bacon slices 8
  Tomatoes 6
  Low fat plain cottage cheese 1 1⁄8 Cup (18 tbs)
  Freshly ground black pepper To Taste
  Seeded whole wheat rolls/White bread rolls 4 Large
  Scallions 2 , chopped
Directions

1. Preheat the broiler to high. Remove any visible fat and rind from the bacon and cut 4 of the tomatoes in half Place the bacon and tomatoes, cut-side up, under the preheated broiler and cook, turning the bacon over halfway through, for 8-10 minutes, or until the bacon is crisp and the tomatoes are softened. Remove the tomatoes and bacon from the broiler and drain the bacon on paper towels to help remove any excess fat. Keep the bacon and tomatoes warm.
2. Meanwhile, cut the remaining tomatoes into bite-size pieces and combine with the cottage cheese in a bowl. Cut the bacon into bite-size pieces and stir into the cottage cheese mixture. Season to taste with pepper.
3. Cut the bread rolls in half and divide the bacon filling evenly over each roll base. Sprinkle the scallions over the filling and cover with the roll tops. Serve at once with the broiled tomatoes.
