Buckboard Bacon HD Version

Ingredients
  Boneless pork butt 2 Pound
  Oil 3 Tablespoon (For frying)
Directions

GETTING READY:
1) Apply the cure to the pork and let it rest for 10 days in the refrigerator.

MAKING:
2)Smoke the pork with hickory wood for 3 hours and allow it to cool. Once the bacon is cool slice it into thin strips.
3)In a pan heat oil and fry the bacon strips.

SERVE:
4)Pan fried bacon is now ready to be served on sandwiches and salads.

For the cure:
kosher salt- 1/4 cup
brown sugar- 1/4 cup
maple syrup- 1/4 cup
sodium nitrate- 2 tsp (Morton tender quick used)
